- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 1 pound spicy sausage, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cups spinach
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes to taste
Instructions
- Cook the fettuccine pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned.
- Add the bell peppers, onion, and garlic. Sauté until the vegetables are tender.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add the spinach and cook until wilted.
- Stir in the Parmesan cheese and season with salt, pepper, and red pepper flakes.
- Add the cooked pasta to the skillet and toss to combine everything.
- Serve immediately.
Notes
For extra heat, use a spicier sausage or add more red pepper flakes. Can be made vegetarian by substituting sausage.
