Ingredients

- 8 oz penne pasta
- 1 lb chicken breast, diced
- 1 cup BBQ sauce
- 1/4 cup honey
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1/2 cup onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in the diced onion and sliced bell peppers, cooking until softened, about 3-4 minutes.
- Add the penne pasta, BBQ sauce, honey, and chicken broth to the skillet.
- Stir well to combine, then bring the mixture to a simmer.
- Cover and cook for 10-12 minutes, or until the pasta is cooked and has absorbed most of the liquid.
- Season with salt and pepper to taste.
- Serve warm, garnished with chopped parsley.
Notes
For best results, use a variety of colorful bell peppers and serve with a side salad or garlic bread. Adjust the sweetness of the sauce with more or less honey as per your taste.
