  • 4 cloves garlic (minced)
  • 1 cup coconut cream
  • 2 cups chicken broth
  • Fresh herbs (rosemary, thyme)
  • Salt and pepper (to taste)
  • Olive oil (for cooking)

Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. In a large skillet over medium heat, add olive oil and sear the chicken thighs skin-side down for about 5-7 minutes until golden brown.
  3. Remove the chicken from the skillet, then add minced garlic and sliced mushrooms, stirring occasionally until softened.
  4. Pour in coconut cream and chicken broth, mixing well, and allow to simmer while scraping the bottom of the pan.
  5. Return the chicken to the skillet, add fresh herbs, cover, and let simmer for 20-25 minutes.
  6. Taste and adjust seasoning, adding more broth or coconut cream if the sauce is too thick.
  7. Garnish with additional fresh herbs and serve warm with sides.
