A creamy and indulgent vegan peanut butter mousse that is quick to prepare and perfect for gatherings.
Ingredients

- 1 cup creamy natural peanut butter
- 1 cup chilled coconut cream (scoop thick part from a can)
- 1/3 cup maple syrup (adjust to taste)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 1–2 tablespoons melted dark chocolate (optional, for swirl)
- Toasted peanuts for garnish
- Mint leaves for garnish
Instructions
- Chill your mixing bowl and beaters for 10 minutes to help whipping.
- Meanwhile, scoop the thick coconut cream into a bowl and stir slightly to loosen.
- Whisk the chilled coconut cream until it forms soft peaks.
- In a separate bowl, combine peanut butter, maple syrup, vanilla, and sea salt. Whisk until smooth and glossy.
- Gently fold a third of the whipped coconut cream into the peanut butter mixture to lighten it, then fold in the remaining cream until fully incorporated.
- If using, swirl melted dark chocolate through the mousse with a knife.
- Spoon the mousse into serving glasses and chill for at least one hour before serving.
- Garnish with toasted peanuts or mint leaves before serving.
Notes
For a lighter mousse, use aquafaba instead of coconut cream. Ensure you don’t over-whip the coconut cream to maintain a smooth texture.
