A creamy and indulgent vegan peanut butter mousse that is quick to prepare and perfect for gatherings.


Ingredients

  • 1 cup creamy natural peanut butter
  • 1 cup chilled coconut cream (scoop thick part from a can)
  • 1/3 cup maple syrup (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 12 tablespoons melted dark chocolate (optional, for swirl)
  • Toasted peanuts for garnish
  • Mint leaves for garnish

Instructions

  1. Chill your mixing bowl and beaters for 10 minutes to help whipping.
  2. Meanwhile, scoop the thick coconut cream into a bowl and stir slightly to loosen.
  3. Whisk the chilled coconut cream until it forms soft peaks.
  4. In a separate bowl, combine peanut butter, maple syrup, vanilla, and sea salt. Whisk until smooth and glossy.
  5. Gently fold a third of the whipped coconut cream into the peanut butter mixture to lighten it, then fold in the remaining cream until fully incorporated.
  6. If using, swirl melted dark chocolate through the mousse with a knife.
  7. Spoon the mousse into serving glasses and chill for at least one hour before serving.
  8. Garnish with toasted peanuts or mint leaves before serving.

Notes

For a lighter mousse, use aquafaba instead of coconut cream. Ensure you don’t over-whip the coconut cream to maintain a smooth texture.
