Ingredients
- Spaghetti or fettuccine
- Pancetta or guanciale (substitute with crispy bacon or plant-based option)
- Miso paste (white, yellow, or red)
- Eggs (preferably room temperature)
- Freshly grated Parmesan cheese
- Minced garlic
- Freshly cracked black pepper
- Fresh herbs (such as parsley or basil) for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- Prepare the Miso Mixture: In a mixing bowl, whisk together the eggs, grated Parmesan, and miso paste. Set aside.
- Sauté the Pancetta: Cook pancetta in a skillet over medium heat until crispy. Add minced garlic and sauté for an additional minute.
- Combine Pasta and Sausage: Transfer drained pasta directly from the pot to the skillet with pancetta. Toss to coat.
- Create the Sauce: Remove skillet from heat and quickly pour in the egg and miso mixture over the hot pasta. Stir vigorously to combine.
- Season: Add freshly cracked black pepper to taste, adjusting seasoning if necessary.
- Serve: Dish out the Umami Miso Carbonara immediately, garnished with fresh herbs and additional cheese, if desired.
Notes
Reserve some pasta water to thin the sauce if it becomes too thick. Make sure to remove the skillet from the heat before adding the egg mixture to avoid scrambling the eggs.
