Ingredients

- 2 pounds Yukon gold potatoes (or Russet potatoes for fluffiness)
- 1 bulb garlic
- 1/2 cup unsalted butter (or plant-based butter for a vegan option)
- 1 cup heavy cream (or half-and-half or coconut milk for a lighter version)
- Salt and freshly ground black pepper to taste
- Optional: chives or parsley for garnish
Instructions
- Roast the garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and roasting at 400°F for about 35 minutes until golden and fragrant.
- Peel and quarter the potatoes. Boil in salted water until fork-tender, approximately 15–20 minutes.
- Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves into the pot.
- Warm the butter and cream together until melted, then stir into the potatoes. Mash until smooth.
- Season with salt and pepper to taste. Optional: garnish with fresh chives or parsley.
Notes
For an ultra-smooth consistency, pass the potatoes through a ricer before adding garlic, butter, and cream. Avoid overworking the potatoes to prevent gumminess.
