Instructions

  1. Roast the garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and roasting at 400°F for about 35 minutes until golden and fragrant.
  2. Peel and quarter the potatoes. Boil in salted water until fork-tender, approximately 15–20 minutes.
  3. Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves into the pot.
  4. Warm the butter and cream together until melted, then stir into the potatoes. Mash until smooth.
  5. Season with salt and pepper to taste. Optional: garnish with fresh chives or parsley.

Notes
