Ingredients

  • 4 slices beef bacon
  • 1 large sweet onion, sliced
  • 4 slices rustic sourdough bread
  • 1 cup sharp cheddar cheese, grated
  • 1 cup mozzarella cheese, grated
  • 2 tablespoons butter
  • Fresh thyme or rosemary (optional)

Instructions

  1. Slice the onions and beef bacon. Grate or slice your cheese.
  2. In a skillet over medium heat, melt a tablespoon of butter. Add the onions, season lightly with salt, and cook until golden brown, about 15–20 minutes.
  3. Add the beef bacon to the skillet and cook until crispy, removing it from the heat afterward.
  4. Butter the outside of two slices of bread. Layer cheese, caramelized onions, beef bacon, and more cheese between the slices.
  5. Cook the sandwich in the skillet on medium-low heat until golden, about 4–5 minutes per side.
  6. Remove from heat, slice in half, and serve with a dipping sauce or salad.

Notes

For an extra flavor boost, add a splash of balsamic vinegar to the onions while caramelizing. Avoid using high heat to ensure the cheese melts perfectly.
