- 4 slices beef bacon
- 1 large sweet onion, sliced
- 4 slices rustic sourdough bread
- 1 cup sharp cheddar cheese, grated
- 1 cup mozzarella cheese, grated
- 2 tablespoons butter
- Fresh thyme or rosemary (optional)
Instructions
- Slice the onions and beef bacon. Grate or slice your cheese.
- In a skillet over medium heat, melt a tablespoon of butter. Add the onions, season lightly with salt, and cook until golden brown, about 15–20 minutes.
- Add the beef bacon to the skillet and cook until crispy, removing it from the heat afterward.
- Butter the outside of two slices of bread. Layer cheese, caramelized onions, beef bacon, and more cheese between the slices.
- Cook the sandwich in the skillet on medium-low heat until golden, about 4–5 minutes per side.
- Remove from heat, slice in half, and serve with a dipping sauce or salad.
Notes
For an extra flavor boost, add a splash of balsamic vinegar to the onions while caramelizing. Avoid using high heat to ensure the cheese melts perfectly.
