- 2 chicken breasts
- 8 oz pasta (fettuccine or penne)
- 2 tbsp olive oil
- 3 cloves fresh garlic, minced
- 1 sweet onion, chopped
- 8 oz button mushrooms, sliced
- 2 cups spinach or kale
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Fresh herbs (basil and parsley), chopped
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, reserving 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until golden brown, about 5-7 minutes per side. Remove and let it rest before slicing.
- Add more olive oil if necessary in the skillet. Sauté onions, garlic, and mushrooms until translucent, about 5-6 minutes.
- Stir in sun-dried tomatoes, spinach, and heavy cream. Simmer, adding reserved pasta water as needed for desired consistency.
- Add sliced chicken and cooked pasta, tossing gently to coat. Adjust seasoning with salt, pepper, and herbs to taste.
- Serve hot, topped with grated Parmesan and fresh herbs, and a crack of black pepper.
Notes
For a lighter version, use chicken breast instead of thighs. To store leftovers, keep in an airtight container in the refrigerator for up to 3 days.
