Easy Tuna Noodle Casserole

Description

A comforting and nostalgic Tuna Noodle Casserole combining tender egg noodles, flaked tuna, sautéed mushrooms, and creamy sauce, topped with melted cheese.


Ingredients

  • 12 oz egg noodles
  • 2 cans chunk light tuna, drained
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 2 cups grated cheddar cheese
  • 1 cup frozen peas
  • 1 cup fresh mushrooms, sliced
  • 2 tbsp butter
  • Salt, to taste
  • Pepper, to taste
  • Dried thyme, to taste

Instructions

  1. Boil a large pot of salted water and cook the egg noodles according to package directions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt butter and add fresh mushrooms, sauté until golden brown, about 5 minutes. Stir in cream of mushroom soup and milk, mixing thoroughly. Cook for another 2-3 minutes.
  3. In a large bowl, mix the cooked noodles, sautéed mushrooms, flaked tuna, and frozen peas. Season with salt, pepper, and dried thyme.
  4. Gradually fold in half of the grated cheese into the mixture, reserving the rest for topping.
  5. Pour everything into a greased 9×13-inch baking dish and level it out evenly.
  6. Sprinkle the remaining cheese on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until bubbly and golden brown on top.
  7. Let cool slightly before serving.

Notes

For a healthier version, use whole grain noodles and low-fat soup. Consider adding diced bell peppers for crunch or swapping in beans for a vegetarian twist.
