Description
A comforting and nostalgic Tuna Noodle Casserole combining tender egg noodles, flaked tuna, sautéed mushrooms, and creamy sauce, topped with melted cheese.

- 12 oz egg noodles
- 2 cans chunk light tuna, drained
- 1 can cream of mushroom soup
- 1 cup milk
- 2 cups grated cheddar cheese
- 1 cup frozen peas
- 1 cup fresh mushrooms, sliced
- 2 tbsp butter
- Salt, to taste
- Pepper, to taste
- Dried thyme, to taste
Instructions
- Boil a large pot of salted water and cook the egg noodles according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt butter and add fresh mushrooms, sauté until golden brown, about 5 minutes. Stir in cream of mushroom soup and milk, mixing thoroughly. Cook for another 2-3 minutes.
- In a large bowl, mix the cooked noodles, sautéed mushrooms, flaked tuna, and frozen peas. Season with salt, pepper, and dried thyme.
- Gradually fold in half of the grated cheese into the mixture, reserving the rest for topping.
- Pour everything into a greased 9×13-inch baking dish and level it out evenly.
- Sprinkle the remaining cheese on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until bubbly and golden brown on top.
- Let cool slightly before serving.
Notes
For a healthier version, use whole grain noodles and low-fat soup. Consider adding diced bell peppers for crunch or swapping in beans for a vegetarian twist.
