Ingredients

- 4 Irish pork sausages
- 8 slices of bacon
- 2 medium sweet onions, sliced
- 4 medium Yukon Gold potatoes, sliced
- 4 cups chicken or beef broth
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, fry the chopped bacon over medium heat until crispy.
- Add sliced onions to the pot and cook until translucent, about 5 minutes.
- Add the sausages, allowing them to brown slightly.
- Layer in the sliced potatoes and stir to combine.
- Pour in enough broth to just cover the ingredients. Season with herbs, salt, and pepper.
- Bring to a gentle simmer, cover, and cook on low heat for about 60 minutes, stirring occasionally.
- Optionally add a splash of stout beer or mustard in the last 15 minutes of cooking.
Notes
Serve with crusty bread and a side salad for a complete meal. Store leftovers in an airtight container for up to 3 days.
