- ½ cup strong brewed espresso

Instructions
- Prepare the espresso: Brew strong espresso and let it cool to room temperature.
- Cream the mascarpone: In a mixing bowl, combine mascarpone cheese, sugar, heavy cream, vanilla, and cooled espresso. Use a hand mixer on medium speed until smooth and creamy.
- Melt the chocolate: In a microwave-safe bowl, melt chocolate in 30-second intervals, stirring between each session until fully melted and smooth.
- Combine chocolate with mascarpone mixture: Once the chocolate has cooled slightly, fold it gently into the mascarpone mixture.
- Chill the mixture: Cover the bowl with plastic wrap and refrigerate for about 1 to 2 hours, or until it’s firm enough to form truffles.
- Shape the truffles: Using a small cookie scoop or your hands, scoop out spoonfuls of the chilled mixture and roll into balls.
- Roll in cocoa powder: Place cocoa powder in a shallow dish and roll each truffle until evenly coated.
- Store as needed: Place finished truffles in an airtight container and refrigerate until serving.

For extra flavor, consider adding a splash of coffee liqueur to the mascarpone mixture.
