- 1 can (15 ounces) chickpeas, drained and rinsed, or 1 ½ cups dried chickpeas soaked overnight
- 1–2 teaspoons cinnamon
- 1–2 tablespoons brown sugar (or coconut sugar/maple syrup)
- 1 tablespoon olive oil
- ½ teaspoon vanilla extract (optional)
- Sea salt (a pinch)
Instructions
- Preheat your oven to 400°F (200°C).
- Drain and rinse chickpeas, or soak and cook dried chickpeas until tender.
- Pat chickpeas dry with a kitchen towel.
- In a mixing bowl, combine chickpeas with olive oil, cinnamon, brown sugar, vanilla extract, and salt. Coat well.
- Spread chickpeas evenly on a baking sheet and roast for 30-40 minutes, stirring every 15 minutes until golden and crispy.
- Allow to cool on the baking sheet, then store in an airtight container for up to a week.
Notes
Watch the chickpeas closely towards the end of cooking to avoid burning. Drying the chickpeas before roasting is crucial for crispiness.
