Ingredients

  • 1 cup long-grain white or brown rice
  • 1 cup diced bell peppers (red, green, yellow)
  • 1 medium onion, diced
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt, to taste
  • 2 cups beef or vegetable broth
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Fresh cilantro, for garnish
  • 1 lime, for garnish

Instructions

  1. Heat a splash of olive oil in a large skillet over medium heat. Add diced onions and cook until translucent. Stir in minced garlic and cook for about 30 seconds until fragrant.
  2. Add ground beef, breaking it apart with a spatula. Season with salt and pepper. Brown the meat for about 5–7 minutes until fully cooked.
  3. Sprinkle in chili powder, cumin, and paprika, stirring well to coat the meat. Add rice and diced bell peppers, mixing everything together.
  4. Pour in broth, stirring to combine, then bring to a gentle simmer. Cover and reduce heat to low. Cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Once cooked, sprinkle shredded cheese on top and cover until melted and bubbly (around 3–5 minutes).
  6. Remove from heat. Garnish with fresh cilantro and a generous squeeze of lime. Serve hot.

Notes

For a lighter option, consider substituting ground beef with ground turkey or chicken. Fresh garlic can be swapped for garlic powder as needed.
