- 1 pound ground beef (or turkey/chicken)
- 1 cup long-grain white or brown rice
- 1 cup diced bell peppers (red, green, yellow)
- 1 medium onion, diced
- 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt, to taste
- 2 cups beef or vegetable broth
- 1 cup shredded cheddar or Monterey Jack cheese
- Fresh cilantro, for garnish
- 1 lime, for garnish
Instructions
- Heat a splash of olive oil in a large skillet over medium heat. Add diced onions and cook until translucent. Stir in minced garlic and cook for about 30 seconds until fragrant.
- Add ground beef, breaking it apart with a spatula. Season with salt and pepper. Brown the meat for about 5–7 minutes until fully cooked.
- Sprinkle in chili powder, cumin, and paprika, stirring well to coat the meat. Add rice and diced bell peppers, mixing everything together.
- Pour in broth, stirring to combine, then bring to a gentle simmer. Cover and reduce heat to low. Cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Once cooked, sprinkle shredded cheese on top and cover until melted and bubbly (around 3–5 minutes).
- Remove from heat. Garnish with fresh cilantro and a generous squeeze of lime. Serve hot.
Notes
For a lighter option, consider substituting ground beef with ground turkey or chicken. Fresh garlic can be swapped for garlic powder as needed.
