Ingredients

  • 1 cup almond flour
  • 4 whole eggs
  • 1 teaspoon baking powder
  • 8 ounces mascarpone cheese
  • 4 ounces cream cheese
  • 1/4 cup strong brewed coffee
  • Sweetener of choice (erythritol or monk fruit)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, whisk together almond flour and baking powder.
  3. In another bowl, beat the eggs until frothy, then gradually mix in the sweetener until thick and pale.
  4. Gently fold the dry mixture into the egg mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 12-15 minutes or until the cake springs back when touched.
  6. Once baked, turn the cake onto a kitchen towel dusted with cocoa powder and roll it up gently to cool.
  7. Combine mascarpone, cream cheese, and brewed coffee with sweetener to taste in a bowl to whip the filling.
  8. Unroll the cooled cake and evenly spread the filling on it.
  9. Roll the cake back up tightly, wrap in plastic wrap, and refrigerate for at least 2 hours.
  10. Dust with cocoa powder before serving and slice into portions.

Notes

For an elegant touch, serve with unsweetened whipped cream or fresh berries. This dessert can be frozen for up to three months.
