Instructions
- Dice onions and garlic for that aromatic base.
- In a large skillet, sauté onions and garlic in butter until soft and fragrant.
- Toss in the corn kernels, stirring occasionally, and allow them to achieve slight caramelization.
- Pour in chicken or vegetable broth, adding crushed chipotle peppers and simmer until flavors meld.
- Use an immersion blender for a creamy consistency, leaving some kernels whole for texture.
- Stir in cotija cheese, lime juice, and cilantro. Season to taste.
Notes
Always sauté garlic gently; high heat can make it bitter. Allow the soup to rest before serving to deepen flavors.
