- 1 lb chicken thighs (boneless, skinless)
- 8 oz fresh or dried egg noodles
- 6 cloves garlic (minced)
- 1/4 cup soy sauce
- 2 tbsp brown sugar or honey
- 2 tbsp vegetable oil
- 2 green onions (sliced)
- 8 oz mushrooms (shiitake or button, sliced)
- 1/2 tsp red pepper flakes (optional)
Instructions
- Prepare your ingredients: Chop chicken and mushrooms, and mince the garlic.
- Marinate chicken: Stir together soy sauce, brown sugar, and garlic in a bowl. Add chicken and marinate for at least 20 minutes.
- Cook noodles: Boil water, add noodles, cooking according to package instructions. Drain and toss with oil.
- Sauté: Heat oil in a skillet over medium heat. Cook marinated chicken until golden. Remove from skillet.
- Add mushrooms and garlic: In the same skillet, sauté mushrooms until soft, then add garlic and cook until fragrant.
- Combine: Return chicken to the skillet, add cooked noodles, and toss to coat in the sauce.
- Garnish and serve: Sprinkle with green onions and red pepper flakes if desired. Serve warm.
Notes
For a healthier option, use whole grain or veggie-based noodles. Leftovers can be stored for up to three days in the refrigerator.
