  • 2 fresh chili peppers, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or fish broth
  • Fresh cilantro or parsley, chopped
  • Juice of 1 lemon
  • Olives (optional for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat olive oil over medium heat. Add diced onions and bell peppers, sautéing until soft and aromatic—about 5-7 minutes.
  2. Stir in minced garlic, paprika, cumin, coriander, and turmeric; sauté for an additional minute until fragrant.
  3. Add canned tomatoes (with their juices) and broth to the pan, bringing the mixture to a simmer for about 10 minutes.
  4. Gently place pieces of fish into the sauce, cover, and cook for 8–10 minutes or until the fish is flaky.
  5. Just before serving, stir in freshly chopped cilantro or parsley and a squeeze of lemon juice. Adjust seasoning with salt and pepper, if needed.

Notes

Be careful not to overcook the fish to prevent it from becoming rubbery. Fresh herbs enhance the flavor greatly.
