A comforting dish featuring tender chicken enveloped in a creamy sauce served over flavorful rice.


Ingredients

  • 4 chicken thighs or breasts
  • 1 cup long-grain white rice
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup cream or milk (or almond milk/coconut cream for dairy-free)
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Season chicken with salt and pepper, then sear in a skillet with olive oil until golden brown, about 5-7 minutes per side. Remove and set aside.
  2. Sauté onions in the skillet until translucent, then add minced garlic and cook for an additional minute.
  3. Add rice to the skillet and stir for about a minute to absorb flavors.
  4. Pour in the broth and nestle the chicken back in. Bring to a gentle boil, then reduce heat and cover to simmer.
  5. Once rice is tender (about 20-25 minutes), stir in cream or milk. If too thick, add more broth or water.
  6. Adjust seasoning and serve hot, garnished with fresh herbs.
