- 4 chicken thighs or breasts
- 1 cup long-grain white rice
- 1 onion, diced
- 3 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup cream or milk (or almond milk/coconut cream for dairy-free)
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions
- Season chicken with salt and pepper, then sear in a skillet with olive oil until golden brown, about 5-7 minutes per side. Remove and set aside.
- Sauté onions in the skillet until translucent, then add minced garlic and cook for an additional minute.
- Add rice to the skillet and stir for about a minute to absorb flavors.
- Pour in the broth and nestle the chicken back in. Bring to a gentle boil, then reduce heat and cover to simmer.
- Once rice is tender (about 20-25 minutes), stir in cream or milk. If too thick, add more broth or water.
- Adjust seasoning and serve hot, garnished with fresh herbs.
