Ingredients
Scale
- 2 pounds beef stew meat or chicken thighs
- 8 ounces mushrooms (cremini or button)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 3 stalks celery, sliced
- 1 can (14.5 ounces) diced tomatoes
- 2 cups beef or vegetable broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Chop vegetables and trim the meat.
- Sauté the aromatics: Heat olive oil in a skillet, add onions and garlic, sauté until translucent (about 5 minutes).
- Layer in the slow cooker: Start with sautéed garlic and onions, followed by the meat, then add carrots, celery, and mushrooms.
- Enrich the stew: Pour in diced tomatoes, broth, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
- Slow cook: Set slow cooker on low for 6-8 hours or high for 4-5 hours.
- Taste and adjust: About 30 minutes before serving, taste the stew and adjust seasonings if needed.
- Serve and enjoy: Ladle the stew into bowls and serve hot, optionally topped with fresh parsley.
Notes
Browning the meat prior to slow cooking can deepen flavors. Avoid overcrowding the slow cooker for even cooking.
