- 1 pound ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, rinsed and drained
- 2 potatoes, diced
- 1 can (15 oz) tomato sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Prep your ingredients: Chop your onions, garlic, and mushrooms. Dice your potatoes into bite-sized pieces.
- Brown the meat: In a skillet over medium heat, brown your ground beef or turkey.
- Sauté aromatics: In the same skillet, add onions and mushrooms, cooking until softened. Stir in the garlic for an additional minute.
- Combine ingredients: In the slow cooker, add the meat mixture, corn, black beans, potatoes, tomato sauce, and seasonings. Stir well.
- Cook: Cover and cook on low for 6-8 hours or high for 4 hours.
- Final touches: Taste and adjust seasoning if necessary. Serve warm with parsley.
Notes
For a crispy topping, add shredded cheese in the last 15 minutes of cooking. Can also be baked in the oven after transferring to a casserole dish.
