Description

A comforting one-pot dish featuring ground beef, beans, and potatoes, all slow-cooked to perfection.


Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 potatoes, diced
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop your onions, garlic, and mushrooms. Dice your potatoes into bite-sized pieces.
  2. Brown the meat: In a skillet over medium heat, brown your ground beef or turkey.
  3. Sauté aromatics: In the same skillet, add onions and mushrooms, cooking until softened. Stir in the garlic for an additional minute.
  4. Combine ingredients: In the slow cooker, add the meat mixture, corn, black beans, potatoes, tomato sauce, and seasonings. Stir well.
  5. Cook: Cover and cook on low for 6-8 hours or high for 4 hours.
  6. Final touches: Taste and adjust seasoning if necessary. Serve warm with parsley.

Notes

For a crispy topping, add shredded cheese in the last 15 minutes of cooking. Can also be baked in the oven after transferring to a casserole dish.
