Description
A heartwarming pot pie featuring tender shrimp and rich lobster in a creamy sauce, topped with fluffy Cheddar Bay biscuits.
Ingredients
Scale
- 1 cup shrimp (peeled and deveined)
- 1 cup lobster meat (fresh or canned)
- 1 cup diced carrots
- 1 cup celery (diced)
- 1 cup peas
- 1 cup mushrooms (your choice)
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups seafood stock
- 1 cup heavy cream
- 1 tsp garlic (minced)
- 1 tsp thyme
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold butter
- 1 cup shredded cheddar cheese
- 3/4 cup milk
Instructions
- In a bowl, mix flour, baking powder, and salt. Cut in cold butter until it resembles coarse crumbs. Stir in cheese and milk gently until a dough forms. Set aside.
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Toss in the carrots, celery, peas, and mushrooms, cooking until just tender, around 5 minutes. Stir in flour and mix until incorporated, then slowly pour in seafood stock and cream, whisking to blend. Bring the mixture to a simmer until it thickens, roughly 3-5 minutes.
- Fold the shrimp and lobster into the sauce, seasoning with thyme, salt, and pepper. Transfer this mixture to a greased pie dish.
- Spoon biscuit dough over the top of the seafood mixture evenly. Don’t worry about covering every inch—the rustic look adds charm.
- Bake in a preheated oven at 400°F (200°C) for 25-30 minutes or until the biscuits are golden brown and the filling is bubbly.
- Let it cool for about 10 minutes before serving. Enjoy!
Notes
Use fresh seafood when possible for better flavor. Keep the cream sauce at a gentle simmer to avoid overcooking the shrimp.
