  • 1/2 tsp salt
  • 1/2 cup cold butter
  • 1 cup shredded cheddar cheese
  • 3/4 cup milk

Instructions

  1. In a bowl, mix flour, baking powder, and salt. Cut in cold butter until it resembles coarse crumbs. Stir in cheese and milk gently until a dough forms. Set aside.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Toss in the carrots, celery, peas, and mushrooms, cooking until just tender, around 5 minutes. Stir in flour and mix until incorporated, then slowly pour in seafood stock and cream, whisking to blend. Bring the mixture to a simmer until it thickens, roughly 3-5 minutes.
  3. Fold the shrimp and lobster into the sauce, seasoning with thyme, salt, and pepper. Transfer this mixture to a greased pie dish.
  4. Spoon biscuit dough over the top of the seafood mixture evenly. Don’t worry about covering every inch—the rustic look adds charm.
  5. Bake in a preheated oven at 400°F (200°C) for 25-30 minutes or until the biscuits are golden brown and the filling is bubbly.
  6. Let it cool for about 10 minutes before serving. Enjoy!
