A refreshing and vibrant Seafood Salad featuring fresh crab meat, shrimp, crisp vegetables, and fragrant herbs, perfect for summer gatherings.
Ingredients

- 1 lb fresh lump crab meat
- 1 lb raw shrimp, deveined and peeled
- 1 cup diced bell peppers
- 1 cup diced cucumbers
- 1 cup diced celery
- 1 cup halved cherry tomatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1 avocado, diced (optional)
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Start by boiling or steaming your shrimp until they’re pink and opaque, about 2-3 minutes in boiling water. Immediately plunge them into ice water to stop the cooking.
- If using fresh crab, pick through to remove any shell bits.
- Dice the bell peppers, cucumbers, and celery into bite-sized pieces. Halve the cherry tomatoes and set aside.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper. Taste and adjust seasoning.
- In a large bowl, combine the shrimp, crab meat, chopped vegetables, and freshly chopped herbs. Gently fold in diced avocado if using.
- Pour the dressing over the salad and toss gently until coated. Allow the salad to rest in the refrigerator for about 30 minutes before serving.
- Serve chilled or at room temperature on a bed of greens or with crackers on the side.
