A refreshing and vibrant Seafood Salad featuring fresh crab meat, shrimp, crisp vegetables, and fragrant herbs, perfect for summer gatherings.


Ingredients

  • 1 lb fresh lump crab meat
  • 1 lb raw shrimp, deveined and peeled
  • 1 cup diced bell peppers
  • 1 cup diced cucumbers
  • 1 cup diced celery
  • 1 cup halved cherry tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 avocado, diced (optional)
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Start by boiling or steaming your shrimp until they’re pink and opaque, about 2-3 minutes in boiling water. Immediately plunge them into ice water to stop the cooking.
  2. If using fresh crab, pick through to remove any shell bits.
  3. Dice the bell peppers, cucumbers, and celery into bite-sized pieces. Halve the cherry tomatoes and set aside.
  4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper. Taste and adjust seasoning.
  5. In a large bowl, combine the shrimp, crab meat, chopped vegetables, and freshly chopped herbs. Gently fold in diced avocado if using.
  6. Pour the dressing over the salad and toss gently until coated. Allow the salad to rest in the refrigerator for about 30 minutes before serving.
  7. Serve chilled or at room temperature on a bed of greens or with crackers on the side.
