- Fresh mushrooms (shiitake, cremini, or portobello)
- 1 cup coarse salt (sea salt or kosher salt)
- 1 cup ice cubes
- 2 tablespoons butter or olive oil
- 2 cloves garlic (freshly minced)
- Herbs (thyme or parsley for garnish)
Instructions
- Prepare your ingredients: Clean and slice the mushrooms. Mince the garlic and chop the herbs.
- Create the salt and ice mixture by combining 1 cup of coarse salt with 1 cup of ice in a bowl or shallow dish. Mix well.
- In a skillet over medium heat, melt the butter or olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
- Toss in the mushrooms and cook until they release their moisture and start to brown, about 5–7 minutes.
- Once the mushrooms are cooked, place the salt and ice mixture around them in the pan. Let it sit for about 2 minutes to infuse flavors.
- Remove the salt and ice mixture. Plate the mushrooms and garnish with fresh herbs. Serve warm.
