Ingredients

  • Fresh mushrooms (shiitake, cremini, or portobello)
  • 1 cup coarse salt (sea salt or kosher salt)
  • 1 cup ice cubes
  • 2 tablespoons butter or olive oil
  • 2 cloves garlic (freshly minced)
  • Herbs (thyme or parsley for garnish)

Instructions

  1. Prepare your ingredients: Clean and slice the mushrooms. Mince the garlic and chop the herbs.
  2. Create the salt and ice mixture by combining 1 cup of coarse salt with 1 cup of ice in a bowl or shallow dish. Mix well.
  3. In a skillet over medium heat, melt the butter or olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Toss in the mushrooms and cook until they release their moisture and start to brown, about 5–7 minutes.
  5. Once the mushrooms are cooked, place the salt and ice mixture around them in the pan. Let it sit for about 2 minutes to infuse flavors.
  6. Remove the salt and ice mixture. Plate the mushrooms and garnish with fresh herbs. Serve warm.
