Instructions
- In a mixing bowl, blend 2 cups of all-purpose flour and 1 teaspoon of salt.
- Cut in 1 cup of unsalted butter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Wrap in plastic and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, shredded cheddar, brown sugar, cinnamon, nutmeg, lemon juice, and fresh herbs. Mix until the apples are well-coated.
- Roll out the chilled dough on a lightly floured surface to about ¼-inch thickness.
- Transfer the dough to a parchment-lined baking sheet.
- Spoon the apple filling into the center, leaving a 2-inch border.
- Fold the edges over the filling, crimping them together to create a rustic look.
- Brush the crust with an egg wash (1 beaten egg mixed with 1 tablespoon of water).
- Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
