Ingredients

  • 1 teaspoon salt
  • 1 cup unsalted butter, cold
  • Ice water
  • 4 fresh apples, peeled and sliced
  • 1 cup aged cheddar cheese, shredded
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh herbs (thyme or rosemary)
  • 1 beaten egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Instructions

  1. In a mixing bowl, blend 2 cups of all-purpose flour and 1 teaspoon of salt.
  2. Cut in 1 cup of unsalted butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
  4. Wrap in plastic and chill in the refrigerator for at least 30 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. In a large bowl, combine the sliced apples, shredded cheddar, brown sugar, cinnamon, nutmeg, lemon juice, and fresh herbs. Mix until the apples are well-coated.
  7. Roll out the chilled dough on a lightly floured surface to about ¼-inch thickness.
  8. Transfer the dough to a parchment-lined baking sheet.
  9. Spoon the apple filling into the center, leaving a 2-inch border.
  10. Fold the edges over the filling, crimping them together to create a rustic look.
  11. Brush the crust with an egg wash (1 beaten egg mixed with 1 tablespoon of water).
  12. Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling.

Notes

Make sure to chill the butter for a flaky crust. Pair with light salad or vanilla ice cream for a perfect meal.
