Ingredients

Scale

lbs Brussels sprouts, trimmed and halved

¼ cup pure maple syrup

2 tbsp Dijon mustard

2 tbsp olive oil

½ cup chopped pistachios

Salt and pepper to taste

2 cloves garlic, minced (optional)

Instructions

1. Preheat oven to 400°F (205°C).

2. Toss Brussels sprouts with olive oil in a large bowl.

3. Whisk maple syrup, mustard, garlic, salt, and pepper in a separate bowl.

4. Coat sprouts with the maple mustard mixture.

5. Spread sprouts on a baking sheet and roast for 20–25 minutes, flipping halfway.

6. Add pistachios in the last 5 minutes of roasting.

7. Drizzle extra maple syrup if desired and serve warm.

Notes

Add red pepper flakes for heat.

Substitute pistachios with sunflower seeds for nut-free.

Pair with roasted meats or serve with quinoa for a vegetarian meal.
