- 1 cup Unsalted Butter
- 2 cups Graham Cracker Crumbs
- 8 oz Dark Chocolate (70% cocoa)
- 16 oz Cream Cheese
- 1 cup Granulated Sugar
- 3 Eggs
- 1 cup Fresh Raspberries
- 1 cup Sour Cream
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and melted butter until moistened. Press this mixture firmly into the bottom of a 9-inch springform pan to create a solid crust. Bake for about 10 minutes, then remove it and allow it to cool.
- In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave in short bursts. Stir until smooth and let it cool slightly.
- In a large bowl, beat the cream cheese with granulated sugar until creamy. Add the eggs one at a time, mixing well after each addition. Slowly fold in the melted chocolate, sour cream, and fresh raspberries until just combined.
- Pour the filling into the cooled crust. Bake in the preheated oven for about 50 minutes or until the center is set but slightly jiggles. Turn off the oven and leave the cheesecake inside for another hour.
- Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for the best results.
- When ready to serve, run a knife around the edge of the springform pan before removing. Garnish with more fresh raspberries and a drizzle of melted chocolate.

For best results, chill overnight. Use a water bath while baking for a creamy texture.
