Description

A creamy and comforting chicken dish combined with earthy mushrooms and aromatic onions, perfect for family gatherings or cozy dinners.


Ingredients

  • 1 lb Chicken Breasts (or thighs)
  • 8 oz Mushrooms (button, cremini, or shiitake)
  • 1 Onion (yellow or shallots)
  • 2 cloves Garlic (minced)
  • 1 cup Chicken Broth (or vegetable broth for vegetarian)
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 tbsp Dijon Mustard
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • Fresh herbs (parsley, thyme, or dill)

Instructions

  1. Slice chicken into thin strips and season with salt and pepper.
  2. Clean and slice mushrooms, chop onion, and mince garlic.
  3. Heat olive oil and butter in a large skillet over medium heat, then add the chicken, cooking for about 5-7 minutes until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add a bit more oil if needed and sauté onions until translucent, about 3 minutes. Add garlic and mushrooms, cooking until mushrooms are browned and tender.
  5. Stir in Dijon mustard and cook for a minute. Add chicken broth, stirring to combine and let it simmer for 5 minutes.
  6. Return the chicken to the skillet, stirring in the sour cream until creamy and well combined. Simmer for another 2-3 minutes.
  7. Sprinkle with freshly chopped parsley before serving. Pair with egg noodles or mashed potatoes.

Notes

Do not overcrowd the pan while browning the chicken. Monitor heat to prevent curdling the sour cream.
