- 1 can (15 oz) of black or pinto beans, rinsed and drained
- 1 medium onion, diced

- 1 bell pepper, chopped

- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh herbs for garnish (cilantro or parsley)
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent. Stir in the minced garlic and bell pepper, cooking for an additional 2-3 minutes.
- Sprinkle in cumin, smoked paprika, salt, and pepper. Stir well to combine, allowing the spices to bloom for a minute.
- Add the rice to the skillet, stirring until the rice is well coated with the aromatic mixture.
- Slowly add the broth, bringing the mixture to a gentle boil. Reduce heat, cover, and let it simmer for about 15-20 minutes until the rice is cooked and has absorbed the liquid.
- Once the rice is fluffy, gently fold in the rinsed beans, allowing them to warm through without overcooking.
- Do a final taste test, adjusting seasoning as needed. Garnish with fresh herbs just before serving.
Notes
For a low-carb version, swap rice for cauliflower rice. Experiment with different vegetables based on the season.
