Ingredients

  • Pasta of your choice (spaghetti, fusilli, or zucchini noodles)
  • Protein (chicken, shrimp, chickpeas, or lentils)
  • Fresh cremini or button mushrooms
  • Greek yogurt or ricotta cheese
  • Fresh minced garlic
  • Fresh herbs (basil, parsley, or spinach)

Instructions

  1. In a large pot of salted boiling water, cook your pasta until al dente. Save 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté your choice of protein until cooked through and golden brown. Remove from skillet and set aside.
  3. In the same skillet, add more olive oil if needed. Sauté minced garlic and mushrooms until tender, about 5-7 minutes.
  4. Lower the heat, add Greek yogurt or ricotta to the skillet along with reserved pasta water. Stir until creamy and smooth.
  5. Add the cooked pasta and protein back to the skillet, tossing to combine. Finish with fresh herbs, salt, and pepper to taste.
  6. Serve hot, garnished with Parmesan and drizzled with olive oil.

Ensure your pasta is cooked al dente to avoid mushiness. Let yogurt or cheese sit at room temperature for a creamier texture.
