Ingredients
- Pasta of your choice (spaghetti, fusilli, or zucchini noodles)
- Protein (chicken, shrimp, chickpeas, or lentils)
- Fresh cremini or button mushrooms
- Greek yogurt or ricotta cheese
- Fresh minced garlic
- Fresh herbs (basil, parsley, or spinach)
Instructions
- In a large pot of salted boiling water, cook your pasta until al dente. Save 1/2 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Sauté your choice of protein until cooked through and golden brown. Remove from skillet and set aside.
- In the same skillet, add more olive oil if needed. Sauté minced garlic and mushrooms until tender, about 5-7 minutes.
- Lower the heat, add Greek yogurt or ricotta to the skillet along with reserved pasta water. Stir until creamy and smooth.
- Add the cooked pasta and protein back to the skillet, tossing to combine. Finish with fresh herbs, salt, and pepper to taste.
- Serve hot, garnished with Parmesan and drizzled with olive oil.

Ensure your pasta is cooked al dente to avoid mushiness. Let yogurt or cheese sit at room temperature for a creamier texture.
