Description
A vibrant and festive salad combining fresh greens, pomegranate seeds, sautéed mushrooms, and feta cheese, perfect for holiday gatherings.
Ingredients
- Fresh baby greens (arugula, spinach, or mixed greens)
- Pomegranate seeds (fresh are best, but frozen can be a substitute)
- Sautéed mushrooms (cremini or shiitake)
- Feta cheese (crumbled; or goat cheese for a tangy twist)
- Nuts (walnuts or pecans, chopped; can be omitted for a nut-free option)
- Balsamic vinaigrette (store-bought or homemade)
- Optional: thinly sliced apples or pears
- Optional: red onions or shallots for added zing
Instructions
- Prep Your Ingredients: Gather all your fresh ingredients. Rinse and dry your greens, and remove the seeds from the pomegranate if using fresh ones.
- Sauté the Mushrooms: In a skillet over medium-high heat, add olive oil. Once heated, add sliced mushrooms. Sauté until golden brown and just tender, about 5–7 minutes. Season lightly with salt and pepper, then let cool.
- Assemble Your Salad: In a large bowl, arrange the baby greens as a base. Scatter the sautéed mushrooms, pomegranate seeds, nuts, and feta cheese on top.
- Make the Vinaigrette: Whisk together equal parts olive oil and balsamic vinegar. Optionally add a teaspoon of honey or Dijon mustard. Season with salt and pepper to taste.
- Dress and Toss: Just before serving, drizzle the vinaigrette over the salad. Toss gently to combine.
- Serve and Enjoy: Plate the salad in a decorative dish.
Notes
For a delightful crunch, toast your nuts in a dry skillet for about 5 minutes on low heat and let cool before adding to the salad.
