  • Optional: red onions or shallots for added zing

Instructions

  1. Prep Your Ingredients: Gather all your fresh ingredients. Rinse and dry your greens, and remove the seeds from the pomegranate if using fresh ones.
  2. Sauté the Mushrooms: In a skillet over medium-high heat, add olive oil. Once heated, add sliced mushrooms. Sauté until golden brown and just tender, about 5–7 minutes. Season lightly with salt and pepper, then let cool.
  3. Assemble Your Salad: In a large bowl, arrange the baby greens as a base. Scatter the sautéed mushrooms, pomegranate seeds, nuts, and feta cheese on top.
