Ingredients
- Flour tortillas (or corn tortillas for a gluten-free option)
- A blend of mozzarella and provolone cheese (or cheddar/ricotta)
- Tomato sauce (store-bought pizza sauce or homemade marinara)
- Pepperoni, bell peppers, mushrooms, olives, onions, spinach (toppings of choice)
- Fresh basil and oregano (or Italian seasoning)
- Olive oil or butter (for cooking)
Instructions
- Prep the Filling: In a large skillet over medium heat, sauté your choice of vegetables (peppers, onions, mushrooms) until softened. Add diced pepperoni or sausage, and cook until heated through. Stir in the tomato sauce until evenly mixed.
- Prepare the Tortillas: Warm the tortillas in a dry skillet or microwave. Lightly butter one side if desired.
- Assemble the Burritos: On the unbuttered side of each tortilla, layer the filling, sprinkle cheese, and add fresh herbs. Fold in the sides and roll from the bottom up to form a burrito.
- Cook the Burritos: Heat a skillet over medium heat with olive oil or butter. Place burritos seam-side down and cook for 3-4 minutes until golden. Flip and repeat on the other side.
