Description
Pierogi Dill Soup is a creamy, comforting dish filled with hearty potatoes, mushrooms, and fresh dill. A traditional favorite reimagined for modern kitchens.
Ingredients
2 tbsp olive oil
1 large onion, chopped
3 garlic cloves, minced
3 medium potatoes, diced
1 cup chopped mushrooms (cremini or shiitake)
4 cups chicken or vegetable stock
1/2 cup sour cream or cream cheese
1/4 cup fresh dill, chopped
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and sauté for 5-7 minutes until golden.
3. Add minced garlic and cook for another minute.
4. Stir in potatoes and mushrooms, sauté 3-4 minutes.
5. Pour in stock and bring to a boil, then simmer for 15-20 minutes.
6. Once potatoes are tender, reduce heat and stir in sour cream or cream cheese.
7. Remove from heat, stir in fresh dill, and adjust seasoning.
8. Serve hot with crusty bread or salad.
Notes
To make it dairy-free, use cashew cream.
Add a bay leaf while simmering for extra depth.
Blend a portion of the soup for a creamier consistency.
