- ½ cup rolled oats
- ½ cup brown sugar
- ½ tsp cinnamon (for crumble)
- ½ cup unsalted butter, melted (for crumble)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Stir in the milk until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- Gently fold in the chopped apples into the batter.
- In another bowl, mix together flour, oats, brown sugar, and cinnamon for the crumble. Pour in the melted butter and mix until crumbly.
- Divide the cupcake batter among the prepared muffin tins, filling them about ¾ full. Top each with a scoop of the crumble mixture.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Once done, let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, consider vanilla extract in the batter or a splash of lemon juice with the apples. Ensure to cool for a perfect crunch on the crumble topping.
