- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- Pinch of salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or grease it lightly.
- In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, and salt.
- In another bowl, cream together the butter and sugars until light and fluffy.
- Add in eggs, vanilla extract, and sour cream, mixing until fully incorporated.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in chopped pecans.
- Spoon the batter into the prepared muffin pan, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a special touch, sprinkle some coarse sugar on top before baking for added crunch.
