Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or grease it lightly.
  2. In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, and salt.
  3. In another bowl, cream together the butter and sugars until light and fluffy.
  4. Add in eggs, vanilla extract, and sour cream, mixing until fully incorporated.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in chopped pecans.
  7. Spoon the batter into the prepared muffin pan, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a special touch, sprinkle some coarse sugar on top before baking for added crunch.
