68 medium fresh peaches (peeled, pitted, and sliced)

¾ cup granulated sugar

1 tbsp fresh lemon juice

½ tsp ground cinnamon

2 tbsp cornstarch

Pinch of salt


Instructions

1. Wash and peel the peaches. Pit and slice them into thin wedges.

2. In a large bowl, combine peaches, sugar, lemon juice, cinnamon, cornstarch, and salt.

3. Gently toss until the peaches are evenly coated. Let sit for 10–15 minutes to draw out juices.

4. Transfer the mixture to a medium saucepan over medium heat.

5. Cook for 8–10 minutes, stirring frequently, until the mixture bubbles and thickens.

6. For a softer filling, simmer for an additional 5 minutes. Remove from heat.

. Let the filling cool to room temperature before using or storing.

 

Notes

Substitute honey or maple syrup for a natural sweetener alternative.

If using frozen peaches, thaw and drain them well before cooking.
