- 1 lb ground beef or Italian sausage
- 4 cups vegetable broth
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 8 lasagna noodles, broken into pieces
- 1 tsp dried basil
- 1 tsp dried oregano
- Olive oil for sautéing
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onion and minced garlic, cooking until translucent and aromatic.
- Increase the heat slightly and add the ground beef or sausage. Cook until browned, breaking it apart with a spoon.
- Toss in sliced mushrooms and cook for an additional 5 minutes.
- Stir in the crushed tomatoes and tomato paste, mixing well.
- Pour in the vegetable or chicken broth and add the broken lasagna noodles. Bring to a simmer, cooking until the pasta is tender, about 10-15 minutes.
- Lower the heat and gently stir in ricotta cheese until fully incorporated.
- Finally, mix in mozzarella and fresh basil, letting it melt slightly before serving.
Notes
Add a pinch of sugar to balance acidity, or a splash of red wine for extra depth. Taste and adjust seasonings as desired.
