Description

A heartwarming and flavorful blend of lasagna and soup, featuring ground beef, rich tomatoes, and creamy cheeses.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 4 cups vegetable broth
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 8 lasagna noodles, broken into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onion and minced garlic, cooking until translucent and aromatic.
  2. Increase the heat slightly and add the ground beef or sausage. Cook until browned, breaking it apart with a spoon.
  3. Toss in sliced mushrooms and cook for an additional 5 minutes.
  4. Stir in the crushed tomatoes and tomato paste, mixing well.
  5. Pour in the vegetable or chicken broth and add the broken lasagna noodles. Bring to a simmer, cooking until the pasta is tender, about 10-15 minutes.
  6. Lower the heat and gently stir in ricotta cheese until fully incorporated.
  7. Finally, mix in mozzarella and fresh basil, letting it melt slightly before serving.

Notes

Add a pinch of sugar to balance acidity, or a splash of red wine for extra depth. Taste and adjust seasonings as desired.
