- 12 oz Cajun sausage (sliced)
- 1 tablespoon olive oil
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 bell pepper (sliced)
- 8 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley (for garnishing)
Instructions
- In a large pot over medium heat, add the olive oil and sauté the sliced Cajun sausage until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add the diced onion and bell pepper. Sauté until the onions are translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth, followed by the pasta. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes or until the pasta is al dente.
- Once the pasta is cooked, stir in the heavy cream, Cajun seasoning, and the previously sautéed sausage. Allow it to simmer for another 5 minutes until everything is heated through and the sauce has thickened slightly.
- Remove from heat and stir in the grated Parmesan cheese until it beautifully melds with the sauce. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
Taste and adjust the seasoning at the end for a personalized touch. If the sauce is too thick, a splash more of broth or cream can help achieve desired consistency.
