  • Author: Alessia Romano
  • Total Time: 45 minutes
  • Yield: 4 servings 1x
  • Diet: None

Description

A comforting one-pan meal featuring tender chicken, fluffy rice, and a sweet, tangy honey BBQ flavor that evokes memories of family gatherings.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (or boneless for a lighter option)
  • 1 cup long-grain white rice (jasmine or basmati works wonderfully)
  • 1 cup chicken broth
  • ½ cup honey BBQ sauce (store-bought or homemade)
  • 1 medium onion, finely chopped
  • 1 bell pepper, chopped (any color you prefer)
  • 2 cloves garlic, minced
  • 8 ounces of mushrooms, sliced (cremini or button mushrooms are ideal)
  • Salt and black pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Gather all your ingredients before you start. It makes the cooking process smoother and more enjoyable.
  2. In a large skillet over medium-high heat, add a drizzle of oil. Season chicken thighs with salt and black pepper. Sear them skin-side down for around 5-7 minutes until golden brown. Flip and brown the other side for an additional 5 minutes. Once browned, remove from the skillet and set aside.
  3. In the same skillet, toss in the chopped onion, bell pepper, garlic, and sliced mushrooms. Sauté for about 4-5 minutes until softened and fragrant, stirring occasionally to avoid burning.
  4. Stir in the rice, allowing it to toast slightly for about a minute. Then, pour in the chicken broth and honey BBQ sauce, mixing everything well.
  5. Place the seared chicken thighs back into the skillet, skin side up. Ensure they nestle comfortably in the rice mixture.
  6. Reduce the heat to low, cover the skillet, and let it simmer for about 25-30 minutes or until the rice is cooked and has absorbed most of the liquid.
  7. Once the rice is tender and the chicken is fully cooked, sprinkle with fresh herbs before serving.

Notes

For added richness, consider adding a touch of butter right before serving. Avoid rushing the cooking time and ensure you let the dish rest before serving.
