- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 3 cups baby spinach
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart as it cooks.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in the penne pasta and add enough water to cover the pasta. Bring to a boil and cook until the pasta is al dente.
- Reduce the heat and add the heavy cream and baby spinach. Stir until the spinach wilts.
- Mix in the grated Parmesan cheese and season with salt and pepper.
- Serve hot, garnished with fresh basil.
Notes
For extra flavor, use spicy Italian sausage. You can add other vegetables like bell peppers or mushrooms for variety.
