- 8 ounces of your favorite pasta (spaghetti, fettuccine, or penne)
- 4 tablespoons unsalted butter
- 2 minced garlic cloves
- 1 cup sliced mushrooms (baby bella or cremini)
- 3 cups chicken or vegetable broth
- ½ to 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Squeeze of lemon juice
- Fresh herbs for garnish (optional)
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sliced mushrooms, cooking until the mushrooms are golden, about 5–7 minutes.
- Stir in the uncooked pasta and pour in the broth. Bring to a boil then reduce to a simmer, covering the pan.
- Cook the pasta according to package instructions, usually 10-12 minutes, stirring occasionally.
- Once the pasta is al dente and most of the liquid is absorbed, remove from heat and stir in the grated Parmesan cheese until creamy.
- Season with salt, pepper, and lemon juice to taste. Garnish with extra Parmesan and chopped herbs if desired.
Notes
Use a larger skillet for easier stirring and adjust the pasta-to-broth ratio for a saucier dish.
