Ingredients

  • 8 ounces of your favorite pasta (spaghetti, fettuccine, or penne)
  • 4 tablespoons unsalted butter
  • 2 minced garlic cloves
  • 1 cup sliced mushrooms (baby bella or cremini)
  • 3 cups chicken or vegetable broth
  • ½ to 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Squeeze of lemon juice
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are golden, about 5–7 minutes.
  3. Stir in the uncooked pasta and pour in the broth. Bring to a boil then reduce to a simmer, covering the pan.
  4. Cook the pasta according to package instructions, usually 10-12 minutes, stirring occasionally.
  5. Once the pasta is al dente and most of the liquid is absorbed, remove from heat and stir in the grated Parmesan cheese until creamy.
  6. Season with salt, pepper, and lemon juice to taste. Garnish with extra Parmesan and chopped herbs if desired.

Notes

Use a larger skillet for easier stirring and adjust the pasta-to-broth ratio for a saucier dish.
