Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Slice the chicken breasts into thin strips. Boil water in a large pot and cook the spaghetti until al dente. Reserve some pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, cooking until golden brown, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, sauté mushrooms and garlic until fragrant and mushrooms are golden.
  4. Lower the heat and pour in the heavy cream. Stir in the Monterey Jack cheese until melted and smooth. Add cooked chicken and mushrooms back into the skillet. Season with salt, pepper, and herbs.
  5. Toss the cooked spaghetti into the sauce, adding reserved pasta water as needed to reach desired consistency.
  6. Garnish with herbs and serve immediately.
