- 4 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup granulated sugar
- 1/4 cup cornstarch
- Juice and zest of 1 lemon
- Pie crust (homemade or store-bought)
- 1 tablespoon melted butter (for brushing)
Instructions
- Roll out your pie dough onto a floured surface until it’s about 1/8-inch thick.
- Fit the dough into a 13×9-inch baking dish, allowing some overhang, and chill it.
- In a mixing bowl, combine the berries, sugar, cornstarch, and lemon juice and zest. Let sit for 20 minutes.
- Preheat the oven to 375°F (190°C).
- Pour the berry mixture into the prepared crust, cover with a top crust, and brush with melted butter.
- Bake for 40-45 minutes until bubbly and golden brown.
- Cool for at least 2 hours before slicing. Serve warm or chilled.
