- 1 store-bought or homemade pie crust
- 1 cup fresh, chopped pecans
- 1 cup brown sugar
- 1 cup light corn syrup (or maple syrup)
- 3 eggs (or flaxseed meal mixed with water for vegan option)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Roll out your pie dough on a floured surface to about 1/8 inch thick. Cut out circles that fit your mini muffin tin and press gently into the tin.
- In a mixing bowl, combine brown sugar, corn syrup, eggs, vanilla extract, and salt, whisking until smooth.
- Fold in chopped pecans.
- Fill each pie crust shell about three-quarters full with the pecan mixture.
- Bake for 15-20 minutes, until filling is set and crust is golden brown.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Be careful not to overbake; the filling should be slightly jiggly when removed from the oven.
