Description

Delightful miniature pies filled with a sweet and gooey pecan filling, perfect for sharing at holiday gatherings.


Ingredients

  • 1 store-bought or homemade pie crust
  • 1 cup fresh, chopped pecans
  • 1 cup brown sugar
  • 1 cup light corn syrup (or maple syrup)
  • 3 eggs (or flaxseed meal mixed with water for vegan option)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out your pie dough on a floured surface to about 1/8 inch thick. Cut out circles that fit your mini muffin tin and press gently into the tin.
  3. In a mixing bowl, combine brown sugar, corn syrup, eggs, vanilla extract, and salt, whisking until smooth.
  4. Fold in chopped pecans.
  5. Fill each pie crust shell about three-quarters full with the pecan mixture.
  6. Bake for 15-20 minutes, until filling is set and crust is golden brown.
  7. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Be careful not to overbake; the filling should be slightly jiggly when removed from the oven.
