Ingredients

  • 200g digestive biscuits (or graham crackers)
  • 100g melted unsalted butter
  • 2 tablespoons sugar (use brown for a richer flavor)
  • 600g cream cheese (room temperature)
  • 200g sour cream (or Greek yogurt)
  • 200g powdered sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 200g dark chocolate (at least 70% cocoa)
  • 200ml heavy cream
  • A pinch of sea salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the digestive biscuits into fine crumbs and mix with melted butter and sugar until it resembles wet sand.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for about 10 minutes until golden. Let it cool.
  5. In a bowl, beat the cream cheese until smooth, then add sour cream and powdered sugar.
  6. Add eggs one at a time and stir in vanilla extract. Pour over the crust.
  7. Bake the cheesecake for 50 minutes to an hour, let cool in the oven for an hour.
  8. Heat heavy cream in a saucepan, add chocolate until melted, and stir in sea salt.
  9. Pour the ganache over the cooled cheesecake and refrigerate for at least 4 hours, preferably overnight.
