- 200g digestive biscuits (or graham crackers)
- 100g melted unsalted butter
- 2 tablespoons sugar (use brown for a richer flavor)
- 600g cream cheese (room temperature)
- 200g sour cream (or Greek yogurt)
- 200g powdered sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 200g dark chocolate (at least 70% cocoa)
- 200ml heavy cream
- A pinch of sea salt
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the digestive biscuits into fine crumbs and mix with melted butter and sugar until it resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust for about 10 minutes until golden. Let it cool.
- In a bowl, beat the cream cheese until smooth, then add sour cream and powdered sugar.
- Add eggs one at a time and stir in vanilla extract. Pour over the crust.
- Bake the cheesecake for 50 minutes to an hour, let cool in the oven for an hour.
- Heat heavy cream in a saucepan, add chocolate until melted, and stir in sea salt.
- Pour the ganache over the cooled cheesecake and refrigerate for at least 4 hours, preferably overnight.

Ensure all ingredients are at room temperature for a smooth filling. Be patient during the cooling and chilling processes to avoid cracks.
