Description
Easy Mexican Street Corn (elote) brings the bold flavors of grilled corn, creamy lime sauce, chili, and cotija cheese straight to your table.
Ingredients
4 ears fresh corn on the cob
1/2 cup mayonnaise
1/2 cup crumbled cotija cheese
Juice of 2 limes
2 tsp chili powder or smoked paprika
1/4 cup chopped fresh cilantro (or parsley)
Salt and pepper to taste
Instructions
1. Bring a large pot of water to a boil and blanch corn for 3–5 minutes.
2. Preheat grill to medium-high and grill corn until charred, about 8–10 minutes.
3. In a bowl, mix mayo, lime juice, chili powder, salt, and pepper.
4. Brush grilled corn generously with the sauce.
5. Sprinkle with cotija cheese and cilantro.
6. Serve warm with extra lime and chili powder if desired.
Notes
Use Greek yogurt instead of mayo for a lighter option.
Try feta or Parmesan as a cotija alternative.
Slice corn off the cob and turn it into a street corn salad.
