Ingredients
1 pound carrots, peeled and halved or quartered
2 tablespoons olive oil
2 tablespoons pure maple syrup (plus extra for drizzling)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 ounces goat cheese, crumbled
1/4 cup roasted hazelnuts, chopped
1 teaspoon fresh thyme or rosemary (optional)
Instructions
1. Preheat oven to 425°F (220°C).
2. Wash, peel, and cut carrots into uniform sizes.
3. In a large bowl, toss carrots with olive oil, maple syrup, salt, pepper, and optional herbs.
4. Spread carrots in a single layer on a baking sheet. Roast for 25–30 minutes, stirring halfway through.
5. In the final 5 minutes, sprinkle crumbled goat cheese and chopped hazelnuts over the carrots. Return to the oven briefly to warm the cheese.
6. Remove from oven and drizzle with extra maple syrup if desired.
7. Transfer to serving dish and garnish with fresh herbs. Serve warm.
