Ingredients

- 3 pounds potatoes (Russet or Yukon Gold)
- 8 strips thick-cut bacon
- 1 ½ cups shredded cheddar cheese (sharp and mild)
- ½ cup butter
- 1 cup milk
- 1 cup sour cream
- Garlic powder to taste
- Salt to taste
- Pepper to taste
Instructions
- Peel and chop potatoes, place in a pot, cover with water, and boil until tender (15-20 minutes).
- While potatoes are cooking, fry bacon in a skillet until crispy, drain on paper towels and crumble.
- Drain potatoes, return to pot, and add butter, milk, sour cream, garlic powder, salt, and pepper. Mash until smooth.
- Fold in cheddar cheese and most of the crumbled bacon, reserving some for topping.
- Preheat oven to 350°F (175°C) and transfer the mixture to a greased 9×13-inch baking dish.
- Top with remaining cheese and bacon crumbles.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
Notes
For added flavor, sprinkle chopped chives or green onions before serving. This casserole can be prepared ahead of time and refrigerated before baking.
