Delicious and comforting Lemon Gooey Bars with a buttery crust and smooth, tangy filling, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line with parchment paper.
  2. In a mixing bowl, combine melted butter, 1/2 cup sugar, 1 3/4 cups flour, and salt. Stir until well mixed and press into the bottom of the prepared baking pan. Bake for 15-20 minutes until lightly golden.
  3. In another bowl, whisk together eggs and 1 cup sugar until smooth. Add lemon juice, zest, 1/4 cup flour, and baking powder, mixing until combined.
  4. Pour the filling over the hot crust.
  5. Bake for an additional 20-25 minutes, until the filling is set with a slight jiggle in the center. Let cool completely.
  6. Dust with powdered sugar, cut into squares, and serve.

Notes

Allow bars to cool completely for cleaner cuts. Consider drizzling with lemon glaze for extra flavor.
