Ingredients
2 cups leftover mashed potatoes
1 cup shredded cheddar cheese (substitute: mozzarella or gruyère)
1 egg, beaten
1 tablespoon chopped chives or parsley (optional)
1 clove fresh garlic, minced (or 1/4 teaspoon garlic powder)
Salt and pepper to taste
1/4 cup all-purpose flour (or almond flour for gluten-free)
Oil for brushing or spraying (or non-stick cooking spray)
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine mashed potatoes, cheese, egg, garlic, chives, flour, salt, and pepper. Mix until well blended.
3. With damp hands, roll the mixture into small balls (about walnut size) and place on the prepared tray.
4. Lightly brush or spray the tops with oil for crisping.
5. Bake for 15–20 minutes until golden brown and crispy on the outside.
