A simple and comforting twist on traditional enchiladas, perfect for any gathering.
Ingredients
- Fresh tortillas (corn or flour)
- Protein source (ground beef, rotisserie chicken, or beans)
- Cheese (Monterey Jack and cheddar blend)
- Enchilada sauce (store-bought or homemade)
- Sautéed bell peppers
- Onions
- Mushrooms
- Herbs & spices (cumin, oregano, chili powder)
Instructions
- Heat a large skillet over medium heat. Sauté chopped onions and bell peppers until fragrant and tender.
- Add your choice of protein or mushrooms and cook until browned. Stir in half of the enchilada sauce and season with cumin and chili powder.
- Preheat your oven to 350°F (175°C).
- In a baking dish, spread a bit of enchilada sauce at the bottom to prevent sticking.
- Lay out a tortilla, add a generous scoop of the filling, and sprinkle some cheese on top. Roll it up and place it seam-side down in the dish. Repeat until all filling is used.
- Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle with cheese until generously covered.
- Cover with foil and bake for 20-25 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and golden.
- Allow to cool slightly, then serve hot with your choice of toppings—sour cream, cilantro, or avocado.
Notes
For crunchy tortillas, crisp them lightly in a dry skillet before layering. Store leftovers in an airtight container for up to 3-4 days.
