Description

A simple and comforting twist on traditional enchiladas, perfect for any gathering.


Ingredients

  • Fresh tortillas (corn or flour)
  • Protein source (ground beef, rotisserie chicken, or beans)
  • Cheese (Monterey Jack and cheddar blend)
  • Enchilada sauce (store-bought or homemade)
  • Sautéed bell peppers
  • Onions
  • Mushrooms
  • Herbs & spices (cumin, oregano, chili powder)

Instructions

  1. Heat a large skillet over medium heat. Sauté chopped onions and bell peppers until fragrant and tender.
  2. Add your choice of protein or mushrooms and cook until browned. Stir in half of the enchilada sauce and season with cumin and chili powder.
  3. Preheat your oven to 350°F (175°C).
  4. In a baking dish, spread a bit of enchilada sauce at the bottom to prevent sticking.
  5. Lay out a tortilla, add a generous scoop of the filling, and sprinkle some cheese on top. Roll it up and place it seam-side down in the dish. Repeat until all filling is used.
  6. Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle with cheese until generously covered.
  7. Cover with foil and bake for 20-25 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and golden.
  8. Allow to cool slightly, then serve hot with your choice of toppings—sour cream, cilantro, or avocado.

Notes

For crunchy tortillas, crisp them lightly in a dry skillet before layering. Store leftovers in an airtight container for up to 3-4 days.
